做法(fǎ ):洗净宰好鲫鱼,洗净(jìng )淮山(shān )和薏米(mǐ )。用清水把陈(chén )皮泡软(ruǎn ),拍(pāi )裂(liè )一(yī )小块(kuài )姜,热锅(guō ),用(yòng )姜块在(zài )锅上擦一遍,放(fàng )两勺油,待油六成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼(yú )和其他(tā )材料,武(wǔ )火(huǒ )煮沸,转(zhuǎn )中(zhōng )小火煲(bāo )一个半小(xiǎo )时,下(xià )盐调味即可(kě )品尝。
