做(zuò )法:春(chūn )笋(sǔn )切成(chéng )片后加少(shǎo )许盐(yán )捞出后用(yòng )清水(shuǐ )浸泡,生姜(jiāng )切(qiē )片,葱切(qiē )成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻(fān )炒1分钟(zhōng )左(zuǒ )右。再加入生(shēng )抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少(shǎo )量清水半掩(yǎn )住(zhù )春笋,盖上锅盖(gài )大火煮开后转中火。煮(zhǔ )到(dào )水快熬干(gàn )的时候加入盐,翻炒(chǎo )均(jun1 )匀(yún )稍收汁(zhī )时(shí )盖上(shàng )锅(guō )盖(gài )焖。
