做法:春笋切成(chéng )片后加少许盐捞出后用(yòng )清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右(yòu )。再(zài )加(jiā )入(rù )生抽、老抽(chōu )、蚝油翻炒均(jun1 )匀(yún ),加入(rù )少(shǎo )量清水半掩(yǎn )住(zhù )春笋,盖上锅(guō )盖(gài )大火煮(zhǔ )开(kāi )后(hòu )转(zhuǎn )中火。煮到水(shuǐ )快熬(áo )干的时(shí )候加入(rù )盐,翻(fān )炒均匀稍(shāo )收(shōu )汁(zhī )时盖(gài )上锅盖焖。
