做法(fǎ ):洗净(jìng )宰好鲫鱼,洗净淮山(shān )和薏米。用清水(shuǐ )把陈皮泡软(ruǎn ),拍(pāi )裂一小块姜(jiāng ),热锅(guō ),用(yòng )姜块(kuài )在(zài )锅上擦一遍,放两勺油,待油(yóu )六(liù )成(chéng )热下鱼,煎至微黄。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和(hé )其(qí )他材料(liào ),武火煮(zhǔ )沸(fèi ),转中(zhōng )小火(huǒ )煲(bāo )一(yī )个半小时,下(xià )盐调味(wèi )即可品(pǐn )尝。
