做法(fǎ ):洗净宰好鲫(jì )鱼,洗净淮(huái )山和薏米(mǐ )。用清水把(bǎ )陈皮泡软,拍裂一(yī )小块姜(jiāng ),热(rè )锅,用姜(jiāng )块在锅(guō )上擦一遍,放(fàng )两(liǎng )勺油,待油六成(chéng )热下鱼,煎至微黄(huáng )。煮(zhǔ )沸(fèi )瓦煲里(lǐ )的清水,放入(rù )煎(jiān )煮好(hǎo )的(de )鲫(jì )鱼和其他材料,武(wǔ )火煮沸,转中小(xiǎo )火煲一个半(bàn )小时,下(xià )盐(yán )调(diào )味(wèi )即(jí )可品尝。
