做法:洗净宰(zǎi )好鲫(jì )鱼,洗净淮(huái )山(shān )和薏米。用清(qīng )水把陈皮泡软(ruǎn ),拍裂(liè )一小块姜,热(rè )锅,用姜块在(zài )锅上(shàng )擦一遍(biàn ),放两(liǎng )勺(sháo )油(yóu ),待油(yóu )六成(chéng )热下鱼,煎至(zhì )微黄。煮沸瓦煲里(lǐ )的清(qīng )水,放入煎煮(zhǔ )好(hǎo )的鲫鱼和其(qí )他材料,武火煮(zhǔ )沸(fèi ),转中小火(huǒ )煲一个半(bàn )小时,下盐(yán )调味即可品尝(cháng )。
