做法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和(hé )薏米。用(yòng )清(qīng )水把陈皮(pí )泡软(ruǎn ),拍裂一小块姜,热锅,用(yòng )姜块在锅上擦(cā )一遍(biàn ),放两勺(sháo )油(yóu ),待油(yóu )六成(chéng )热下鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里(lǐ )的清(qīng )水(shuǐ ),放(fàng )入煎煮(zhǔ )好的(de )鲫鱼(yú )和其(qí )他材料,武火煮沸,转(zhuǎn )中小火煲一个半(bàn )小(xiǎo )时,下盐调(diào )味即(jí )可品尝。
