做法:洗净(jìng )宰好(hǎo )鲫(jì )鱼,洗(xǐ )净(jìng )淮山和薏米。用清水(shuǐ )把陈皮泡软(ruǎn ),拍(pāi )裂一小(xiǎo )块姜,热锅,用(yòng )姜(jiāng )块(kuài )在锅(guō )上擦一遍,放(fàng )两勺油(yóu ),待油(yóu )六成热(rè )下(xià )鱼,煎至微(wēi )黄。煮(zhǔ )沸瓦(wǎ )煲(bāo )里的清水(shuǐ ),放入(rù )煎煮好的鲫鱼和其他材料,武火煮沸(fèi ),转中(zhōng )小火煲(bāo )一(yī )个(gè )半小时(shí ),下盐调味即可(kě )品尝。
