做法:洗净(jìng )宰好(hǎo )鲫(jì )鱼,洗净(jìng )淮山和薏米。用清(qīng )水(shuǐ )把陈皮泡(pào )软,拍裂(liè )一小(xiǎo )块姜,热锅,用(yòng )姜块在锅上擦一遍(biàn ),放两勺油(yóu ),待油六成(chéng )热(rè )下(xià )鱼(yú ),煎(jiān )至微(wēi )黄(huáng )。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮好的鲫(jì )鱼和(hé )其他(tā )材料,武火(huǒ )煮沸,转中小火煲一个(gè )半(bàn )小时,下(xià )盐调(diào )味即可品尝(cháng )。
